Super easy Cinnamon Tea Cake with lashings of butter and cinnamon sugar.
Ingredients
60g Butter
1 Egg
3/4 cup Self-Raising Flour
1/2 cup Milk
1/2 cup Sugar
1 tsp Vanilla Essence
1/4 cup Plain Flour
Topping
20g Butter, melted (I use way more than this)
1 tsp Cinnamon
1 tbs Sugar, extra
Method
Preheat oven to 180°C brush a 20cm round cake tin with oil or butter, line base. Cream sugar and butter. Add egg and vanilla. Using a metal spoon fold in sifted flours alternately with milk. Stir until smooth. Spoon into cake tin. Bake for 30 minutes, when cooked turn out and let cool slightly. Brush with melted butter then sprinkle with combined extra sugar and cinnamon. Serve warm.
Note: I use a fair bit of butter and sugar mixture and even perhaps a bit of butter on the piece of tea cake, you can never have enough butter, right??!!

When we did Tea Cake at school we were taught to sprinkle cinnamon and sugar on the cake before baking, but that was back in the 70 when I am sure we must have used margarine.
Oh Dee, I am going to do that next time, and then more on after baking!!!

Hi there! I’m just wondering if you normally double the recipe at all? I just made it with my nieces and there really wasn’t much batter and it barely covered the tray 🙂 Still completely delicious of course!
Hi Renae, it is a very small mixture, I have just popped one in the oven. Did you use a small round tin? It doesn’t come out all that thick does it. I was going to double it today and use a bigger tray, but no, I don’t normally double it in the small tray. 🙂
