Ok, we are solving all the big problems here today. How to make the perfect pikelets.
I used to wonder how on earth people managed to get their pikelets cooks so perfectly without burning them or at the very least leaving brown pan marks on them. Then my step mother in law – Grandmarg – made pikelets for my kids and the penny finally dropped. She told me that the trick was to cook them on a really low heat. So we use the electric frying pan and find that cooking them on about number 3 works an absolute treat.
Now you are going to need patience, don’t rush it, you can wander around and do the washing up while each batch is cooking but just don’t rush, don’t be tempted to turn that heat up. When they start to bubble turn them over. Bam – there you have the perfect pikelet – now lets all say a big thank you to Grandmarg.

Ingredients
2 cups self raising flour
1/2 cup sugar
2 well beaten eggs
1 cup milk
Instructions
Mix well.
Cook in electric frying (greased with butter) pan on low – around number 3 – slowly.
Flip when they start to bubble
Serve with lashings of butter, golden syrup or you choice of topping.
Exactly how my Mum taught me to cook pikelets (about 40 years ago!) right down to the number 3 on the electric frying pan 🙂
