Manda’s Buttercake

I must typed up this blog post ages ago and didn’t ever post it.  Not sure how that happened because Manda’s buttercake is definitely on high rotation around these parts.  It is the best cake ever.  Definitely the one I always use for birthday cakes.  I mostly make cupcakes using it.  They are so good.

Now I know I say these recipes are “the best” all the time, but seriously guys, they are!!  Tried and tested and I have found some trusty recipes that have become my “go to” recipes.   This butter cake recipe is one of them.  My good friend Sal gave it to me years and years ago, she got it from her sister-in-law – Manda.

This is perfect for birthday cakes or just any occasion really.  Of late I have been using it to make cup cakes, they are so light and fluffy.   I usually whip up a buttercream icing to go on top – just plain.   I also find if you add a bit of cinnamon to the icing it gives it a nice flavour if you are after something different.  You could do a lemon icing too which would be fabbo.

Manda’s Buttercake

Ingredients

Units Scale

250g butter (chopped, room temp)

2 teaspoons vanilla

2 cups castor sugar

4 eggs

2 cups self raising flour

1/3 cup custard powder

1 cup milk


Instructions

Pre heat oven to 180 deg C. Grease and line a square cm cake tin or if you like you can make cup cakes.
Cream butter and sugar.
Add the rest of the ingredients and beat well until the mixture changes colour.
Bake for about 45 mins.
Top with icing once cool.
