Corned Beef Fritters

Ingredients

Units Scale

1.5 cups plain flour

4 eggs

1 cup cooked corned meat, diced

1/2 cup creamed corn

1.5 cups self raising flour

1.5 cups milk

1/2 cup onion, diced

Oil


Instructions

Whisk milk, eggs, plain and self raising flour until small bubbles appear in the mixture. Stir in corned meat, onion and corn, until distributed evenly through mixture. Heat oil in pan (quite a bit of oil) place a spoonful of mix into boiling oil. Repeat until pan is comfortably full. Remember the spoonful of mixture expands. Turn fritters until they are cooking and golden brown. Drain on paper towel, serve warm.

This is a large mixture, 1 batch would serve around 10 people.
