Cookie Robyn’s Basic Biscuit Mixture

This is a tried and tested station favourite.  Super easy and really yummy biscuit mixture.  Cookie Robyn was a long serving station cook at Alexandria Station in the NT.  Cookie Robyn used to feed around 25 people each day so she knew all about making big batches and what filled the tummy’s of hungry stockmen.  Here is one of my go to “Cookie Robyn” recipes.  This is great for choc chip cookies and jam drops…

Cookie Robyn’s Basic Biscuit Mixture

Ingredients

Units Scale

300g butter

1/2 tin condensed milk

1/2 cup sugar

2 1/2 cups self raising flour


Instructions

Cream butter and sugar.
Add milk, flour and some vanilla essence (and choc chips if making choc chip cookies).
Roll into balls (raspberry jam is nice for jam drops).
Bake in a moderate oven for about 15 minutes.


I double this recipe and it just fits in the Kenwood mixmaster.  Happy baking.
