Cooking with Chards – Weekly Meal Plan

Well things seem to be escalating again pretty quickly with Brisbane now being a COVID hotspot. NT have now closed their border to people coming from Brisbane meaning you have to quarantine somewhere in QLD at the moment before coming into the NT – I think I have that right. So that means our boys are stuck in QLD. We are not sure what to do. This is such a shit fight and I am feeling a little sad and anxious about our boys. The world has gone mad hasn’t it… I can’t even believe this is real, it is like a bad dream.

Anyway, enough whinging from me, let’s chat food and sort out our weekly meal plan. I reckon you could nearly predict what we are eating this week. Yep you guessed it, corned beef is first up tonight. If you are new around here let me share with you how we cook our corned beef – the DD & Steph method… It is so easy and so yummy. Place the piece of corned beef in your slow cooker, mix some honey and dijon mustard and spread over the piece of corned beef. Turn slow cooker on and cook for around 6-8 hours depending on size. DO NOT add any liquid to the slow cooker – trust me on this one, you are never going to look back. This is a game changer.

The last time I made beef burgers (which was only just over a week ago really) they were so bloody yummy! I just made rissole type flat patties and then I put a heap of cheese on top of each patty and just sat them in the bain marie where they melted a little so they were perfectly ready to go on each burger. SO YUMMY! I can’t wait to have them again oh and we have some “special sauce” coming on the store truck this week so they will be like a macca’s burger only so much better! You could even have 2 all beef patties, special sauce, lettuce, cheese, pickles, onion on a sesame seed bun if you so desired.

So there you have it. I really don’t have much else to talk about unless you wanted me to bang on about Intermittent Fasting but that is a whole other blog post isn’t it – which I have been meaning to type up. Guess what – I have finally reeled Mr Chardy all the way in – hook, line and sinker. He came up to me on Thursday morning with a black coffee and declared that he was on board. My little cult following is definitely growing, I now have around 10 people in my group. Although Mr Chardy tells me he is still a skeptic but he is totally nailing it. I am the lowest weight I have been since about 2014 and I have 3.9kg to go until I reach my goal weight. It is slowly but surely coming off and it is so easy! I have lost a total of 4.6kg since I started around the 15th June. Couldn’t be happier. Anyway, I will stop banging on about it.

The crew are in for smoko and lunch today which is exciting because they were out all of last week. I had best get sorted.

    Isn’t it all weird and strange and WTF! Down here in Covid central, Victoria… we are just about to begin remote learning again. As we are in rural Vic, we are in stage 3 lockdown… Melbourne is a whole other ball game of lock 4.
    But at least my boys are home… I feel for you with them being in Brisbane, hope you can sort something.

      Oh Sandi, things are out of control aren’t they! Crazy!!! Thankfully the NT has lifted the restrictions now to Brisbane so My boys will be able to come home for holidays, what a relief. Hang in there.

          You would be surprised Steph, that is what everyone thinks. The trick is to ease in, start small – even with a 12:12 approach, then a 13:11 and 14:10 etc.

    Yes!! Am managing 14:10 no problem. Wonders never cease!! Will see if I can get better at it. I am sure I will never be able to get to a 3 hour eating window like you do – especially when you are cooking/working in the kitchen all day! πŸ™‚ You amaze me!

      Hi Steph, well done to you, that is amazing – well done! I quite like the smaller windows. I opened my window at 3pm today and feel like I have eaten so much, I am so full. Not sure I will be able to fit dinner in.
