1/4 cup plain flour
1 cup sugar
1 lemon
2 eggs
1 cup milk
Instructions
Sift flour and add sugar
Mix in grated rind of 1 lemon and 1/4 cup lemon juice
Add beaten yolks of 2 eggs and 1 cup of milk
Beat egg whites until stiff and gently fold into mixture
Pour into dish and stand dish in a larger pan of hot water
Cook in moderate oven (180 deg C) for approx 50 minutes
