Sweet’n’Sour Beef Recipe

I can’t believe I haven’t put this recipe up before. It is such a winner. Like many recipes in my trusty cook book this one is from the legendary Robyn Jenkinson. It is also fabulous with chicken.

So here is is my friends…

Sweet’n’Sour Beef

Ingredients

Scale

Marinade:
1kg Rump Steak

1 tablespoon soy sauce

Salt & Pepper

1 teaspoon curry powder

1 teaspoon bi-carb soda

1 teaspoon sugar

1 tablespoon dry sherry

1 teaspoon oil

Sauce:
2/3 cup brown sugar

4 tablespoons white vinegar

3 tablespoons soy sauce

3 tablespoons corn flour

1 small capsicum

2 tomatoes (or I use 1 can diced tomatoes)

1 can crushed pineapple


Instructions

Marinade: mix together, pour over meat and leave at least 2 hours or overnight.
Sauce: Put vinegar, soy and sugar into a saucepan. Blend corn flour with water and add, stir until boils and simmer for 5 minutes. Add capsicum, tomatoes and pineapple. Bring back to boil.

Meat: Pour marinated meat into baking dish, bake for about 1 hour in a moderate oven. When it is just about ready, pour the sauce over the meat. Serve with boiled rice
Notes: I often just use diced tinned tomatoes. I also brown the meat and then put everything in the slow cooker for a couple of hours. Such an easy meal and very tasty.

    Hi Miss Chardy,
    We are presently doing the big lap of Oz, presently staying at Quobba Station, ie in WA, anyway before leaving home, I saved your Sweet ‘n’ Sour Beef recipe, have just put everything into the camp oven for tonight’s dinner, but have a question, there is some soy listed in the marinade ingredients, but none listed in the sauce ingredients, am I missing something?

      Oh my goodness Lynette… I am so glad you brought this to my attention, I think I have stuffed up the ingredients… you are so right – it should have 3 tablespoons of soy sauce in the “sauce” as well as some in the marinade. Thank you so much for letting me know, I am off to change it now. Have a fabulous trip.
